Spring has officially arrived. Crisp snap peas, bright citrus, and layers of botanical complexity come together in this fresh, garden-inspired cocktail with a lively finish.

INGREDIENTS

• 1½ oz J. Rieger Gin
• ¾ oz Snap Pea Syrup*
• ¾ oz Fresh Lime Juice
• ¼ oz Green Chartreuse

INSTRUCTIONS

Combine all ingredients in a shaker with ice. Shake until very cold.
Double-strain into a chilled coupe. Garnish with a torched snap pea on
the rim.

*Snap Pea Syrup
Blanch 350 g sugar snap peas briefly in plain boiling water, then
immediately shock in an ice bath to lock in their vivid spring-green
color. Transfer to a blender with 1 L simple syrup (1:1 sugar to
water) and purée until completely smooth. Strain well through a
fine-mesh sieve or cheesecloth. For the garnish, torch a snap pea
directly or candy a few in warm simple syrup until glossy.
Refrigerate the syrup and use within 3 days for peak color and
flavor.
