This spirit was a labor of love seven years in the making. There was learning to love the flavor of black licorice, then ingredient research, test batches and sampling. The initial distillation of green anise, star anise, fennel, and grand wormwood was followed by a steeping in botanicals to add the green color and flavors of citrus and mint. I love everything about this spirit.
Using fresh citrus peels from our in-house juicing – something we would typically compost – I created a super bright and fresh citrus vodka. This was an experiment that started out as, “Well, let’s see how this works out.” And in the end, I was able to turn a waste product into something beautiful.
I've been interested in using foods from different cultures in the distilling process for a long time. What works well in a sauce should theoretically work well in a spirit. And this mole vodka sees that theory proven. The unique spirit combines the character from the dried chilies with the spice of the cinnamon, while the chocolate notes round out the palate.
